How to Brew black tea

1. Adjust the tea-to-water ratio

Adjust the concentration of the tea liquor to a suitable range (the amount of water poured)

Especially for finely plucked green teas, large-leafed black teas, strongly flavored oolongs, rock teas, and raw Pu'er teas, the amount of tea can be reduced appropriately.

2. Adjust the temperature

If green tea, black tea, white tea, or Oolong tea brewed at high temperatures become too bitter, the water temperature can be moderately lowered. Finely plucked green teas and white teas can be brewed at around 80°C-90°C, while black teas can be brewed at around 90°C-95°C.

For oolong teas, where aroma is the main quality characteristic, lowering the temperature is not recommended. Instead, adjust the tea-to-water ratio and steeping time. For other teas made from mature leaves (such as dark teas and lower-grade white teas), lowering the temperature is also not recommended.

3. Adjust the brewing time

Under appropriate tea-to-water ratio and temperature conditions, choose the right brewing time. If the tea becomes too bitter, use a quick brewing method (quick infusion with short steeping time and moderate amount of tea).

4. Cold brewing

Cold-brewed tea has higher levels of free amino acids and lower levels of tea polyphenols and Caffeine, making it sweet without bitterness.

The Dian Hong you brew turns out sour and bitter, which may just be because you don't know the correct way to brew Dian Hong black tea. Learn the following techniques, and your brewed Dian Hong will be sweet and fragrant. Dian Hong is made from Yunnan large-leaf tea, which contains abundant substances. When brewing, pay attention to the tea-to-water ratio; a general recommendation is 1:30-50. For example, in a 100ml teapot, approximately 3.5g of tea should be used.

After the water boils, wait until the temperature drops to around 80 degrees Celsius before brewing.

Dian Hong should not be steeped for an extended period. Pour the water in and then pour the tea liquor out immediately. After pouring out the tea liquor, make sure to empty the teapot completely; do not leave any residue. Otherwise, the next infusion may become sour and bitter!
