Dian Hong is a short name for Yunnan black tea, which is typically divided into Gongfu black tea and broken black tea. Here, we introduce the brewing method for Yunnan Gongfu Dian Hong, which differs from other regions' black teas. Dian Hong should not be brewed with boiling water at 100°C but rather with water at 85°C to avoid significant differences in taste. Below is a detailed brewing method for Dian Hong Gongfu tea.
Teaware Preparation: Fairness cup/glass (depending on whether you are drinking alone or with others)
Specific Steps: 1. First, when brewing Dian Hong, ensure that the water temperature is around 85°C, with a Steeping time of 1~3 seconds. Note that you should boil the water first and then let it cool for about 5~10 minutes to slightly reduce the temperature. Do not add cold water or use water that has not reached boiling point. 2. Second, when brewing Dian Hong, make sure to pour out the tea quickly. The first three infusions should be poured out after 1 second each. The first infusion is considered a rinse. From the fourth infusion onwards, gradually increase the steeping time to 3 seconds, 5 seconds, 8 seconds, and so on. After pouring out the tea, do not cover the Teapot. Dian Hong can be brewed over ten times.
