As for the water used in brewing, mountain spring water or mineral water is ideal.
2. Warming the Cups
Next, pour cold water into a kettle and bring it to a boil. Once the water is boiling, pour it into the Gaiwan to warm it up. After a few seconds, quickly pour out the water. Then add about 3 grams of tea leaves to the gaiwan. Since the temperature of the gaiwan has risen, you can smell the dry tea's aroma as soon as the tea is added.
3. Washing the Tea
Next, start washing the tea. Pour boiling water into the gaiwan, filling it completely until it overflows. Use the lid to gently skim off any floating foam on the surface.
