Brewing Method for Fengqing Yunnan Black Tea

1. Selection of Tea Utensils

Fengqing Yunnan black tea originates from Fengqing, Lincang, and other areas in Yunnan. To ensure we can appreciate the “Highland Red” beauty, it is recommended to use transparent glass cups or white porcelain gaiwans for brewing. As for the water used in brewing, mountain spring water or mineral water is ideal.

2. Warming the Cups

Next, pour cold water into a kettle and bring it to a boil. Once the water is boiling, pour it into the Gaiwan to warm it up. After a few seconds, quickly pour out the water. Then add about 3 grams of tea leaves to the gaiwan. Since the temperature of the gaiwan has risen, you can smell the dry tea's aroma as soon as the tea is added.

3. Washing the Tea

Next, start washing the tea. Pour boiling water into the gaiwan, filling it completely until it overflows. Use the lid to gently skim off any floating foam on the surface. This is the process of washing the tea. Note that the water temperature for brewing Fengqing Yunnan black tea should be controlled, with 86-90 degrees Celsius being optimal. Water that is too hot can scald the tea leaves.

4. Brewing

After about 15 seconds of steeping, the tea can be poured out. The duration of steeping Fengqing Yunnan black tea is very important. If the steeping time is too long, the tea liquor may become excessively bitter and astringent, which greatly affects the taste. Of course, everyone's palate is different, so this requires practical experience to determine the right steeping time.
