The tenderness and greenness of Mengding Ganlu are directly proportional, so for tender leaf Green Tea, a water temperature around 75°C can be used for brewing. This results in a tea liquor with a bright green color, a fresh taste, and reduces the destruction of Vitamin C in the tea leaves; higher temperatures can easily turn the tea yellow and bitter, with more significant loss of Vitamin C.
Take an appropriate amount of high-quality Mengding Ganlu tea, usually about 4 grams, and prepare a white porcelain Gaiwan or a transparent glass cup.
When boiling water, it's best to use mountain spring water, followed by purified water. After boiling the water to 100°C, pour it into a pitcher to cool slightly, reducing the temperature to between 80°C and 85°C.
When starting to brew, it is recommended to use the top pouring method, which involves first filling the cup about seven-tenths full with water, then adding the tea leaves, and enjoying the process as the leaves gradually sink and unfurl.
If using a gaiwan for brewing, warm the cup first. Pour the cooled water slowly along the edge of the gaiwan, filling it to the rim. Mengding Ganlu should never be “stewed,” so avoid covering it immediately. After 5-8 seconds, the tea liquor will appear, and you should quickly cover the cup to complete the brewing. Avoid letting the tea stew too much.
For experienced tea drinkers, they typically determine the brewing time based on the aroma and color of the tea liquor. If you're a beginner, you can gradually increase the brewing time with each infusion. A good cup of Mengding Ganlu can be savored in three sips, fully enjoying both the fragrance and the tea liquor.
