History and Folklore
The “Shitai Xiangya” tea gardens are mostly located in hills and low-to-medium mountains at altitudes ranging from 300 to 1,000 meters, where biological diversity is rich. The forest coverage rate in the tea region reaches 80.9%. The soil is mainly red or yellow, developed from acidic crystalline rocks or argillaceous rocks, with a pH range of 5.5 to 6.8, which is acidic to slightly acidic. It has moderate organic matter content and is rich in nutrients. Along the Mount Guniujiang range, the soil is rich in selenium, making it a major production area for selenium-rich tea in our county and also the main production area for premium green tea. The climate belongs to the northern margin of the subtropical monsoon climate zone, with distinct seasons, a mild climate, abundant rainfall, and conditions very suitable for tea tree growth. In particular, the adequate precipitation, large day-night temperature differences, and short sunlight duration are conducive to the formation of excellent tea quality.

There are two methods to brew green tea: the top-down method, suitable for high-quality green teas with a tightly compacted appearance, involves first pouring water at 75–85 degrees Celsius into the cup. The bottom-up method involves placing the tea leaves in the cup before adding hot water at around 85 degrees Celsius, suitable for ordinary green teas.
Brewing and drinking green tea correctly enhances its flavor and makes it healthier. There are certain rules to follow, especially concerning water temperature.
General instructions and precautions for brewing green tea:
When brewing green tea, control the water temperature to be around 80°C to 90°C. If brewing green tea powder, use lukewarm water at 40°C to 60°C. The ratio is 2 grams of green tea powder to 450 milliliters of boiled water.
The first infusion of tea should not be consumed; after pouring hot water, simply shake the cup and discard the liquid.
Green tea powder should not be brewed too strongly, as it can affect the secretion of gastric juices. It's best not to drink it on an empty stomach.
