How should Xiaoxinggan be steeped—whole or broken in half? What is the difference in taste?

I usually do it this way: for larger Xiaoxinggan, I break one into two halves and steep half at a time. Since the larger ones can weigh around 14-15 grams, half of that is about 7 grams, which is perfect for Steeping Pu'er ripe Tea. For smaller ones weighing less than 10 grams, one whole is just right.

Sometimes, though, it depends on the tea leaves. Some are finely tipped, while others are coarse and stringy. And even with the same size of Citrus, the weight can vary depending on the production process. So whether you steep Xiaoxinggan whole or broken is up to your personal choice and needs. Recently, a customer told me that steeping it whole produces a notably different flavor. So today, I decided to try it out.

How to steep Xiaoxinggan? (Aim the boiling water at the opening for a more flavorful infusion)

Details of the Xiaoxinggan Steeping Experiment:

One, Water Temperature: Use boiling water, as only boiling water can bring out the best flavor from ripe tea.

Two, Utensil: I used a Gaiwan mainly for easy photography. However, a purple clay pot would also work.

Three, Quantity: Since this was an experiment, I steeped an entire Xiaoxinggan, which weighed 15 grams.

Four, Infusion Time: 6 seconds. I poured out the tea when the color looked right, based on my experience.

Five, Rinse twice; start drinking from the third infusion.

I found that steeping it whole has one drawback: it's impossible to completely pour out all the tea liquid from inside the Xiaoxinggan, so the flavor becomes especially concentrated towards the end. This makes it particularly suitable for those who prefer a strong flavor, and Pu'er ripe tea is generally better when steeped stronger, giving a richer taste.

Conclusion: There isn't much difference in taste between steeping Xiaoxinggan whole or broken in half. Steeping it whole may be too much for fewer than three people, in which case half is enough. For larger groups, steeping the whole thing allows for around 20 infusions, providing enough for everyone.
