Pu-er Ripened Tea Brewing Method

Ripened Tea is relatively difficult to Brew. It's easy to end up with weak flavor, thin mouthfeel, and unpleasant aromas. Even worse, a properly stored tea might produce a brew that leaves the throat feeling dry, irritated, and constricted. This can be quite perplexing. The general approach is as follows: First, analyze the tea's characteristics; second, determine the brewing objective based on these characteristics, aiming to work with its strengths and mitigate its weaknesses; third, consider specific methods to achieve these goals; and finally, through practice, further analyze, verify, and adjust the process.

1. Warming the Cups: Pour boiling water into the cup along the inner wall at the 6 o'clock position, turning leftward until the water covers the lid. Then, pour the water from the lid in a circular motion starting at the 6 o'clock position. Empty the pot into the fairness pitcher.

2. Adding the Tea: Clean the fairness pitcher by pouring its contents into the tasting cups.

3. Rinsing the Tea: Pour boiling water into the cup along the inner wall at the 6 o'clock position, turning leftward until the water covers the lid. Pour the water from the lid in a circular motion starting at the 6 o'clock position. Discard this rinse, repeating the process twice for cleaning the tea.

4. Use the rinse water to warm the tasting cups.

5. Brew the tea using the same method as the rinsing, adjusting the number of infusions based on the number of guests and their preferences.

Tips for Brewing Ripened Pu'er

Before brewing ripened Pu'er tea, place the purple clay pot or covered bowl in a tea washing container, remove the lid, and pour in 100°C boiling water. Replace the lid and pour boiling water over the pot. Using tea tongs, pick up the Teacups and place them above the tea washing container, then pour boiling water over the cups to sterilize them.

Next, use a tea knife or tea needle to pry off 6-8 grams of tea from the ripened Pu'er cake, with a tea-to-water ratio of 1:15 or 1:20. Place the tea on a tea tray and use a tea spoon to transfer it into the covered bowl or purple clay pot. Pour boiling water over the tea, rinsing new tea once and old tea twice!

Brewing with water at 95-100 degrees Celsius enhances the smoothness of the tea liquor. As the flavor becomes lighter, you can increase the water temperature. Finally, you can even boil the tea.
