Even though it's the same Pu'er Tea, the taste and mouthfeel can vary greatly when brewed by different people. That's because the brewing technique hasn't been mastered! To brew raw Pu'er tea, boil a pot of water and clean your Gaiwan and Teaware. Then, add 8 grams of raw Pu'er tea to the gaiwan and pour boiling water (100°C) into it using a low pouring method. The first infusion is to awaken the tea and is not suitable for drinking. If it's aged raw Pu'er tea, it is recommended to rinse it twice before brewing: once to awaken the tea and once to moisten it, checking the purity and concentration of the tea's aroma. Next, fill the gaiwan with boiling water to about seven-tenths full and wait for around five to ten seconds before decanting the tea liquor into a pitcher. Finally, pour the tea into cups for tasting.
Brewing Method for Pu'er Tea Bricks
1. Prizing off Tea: Use a tea knife to prize off an appropriate amount (5-10 grams) of Pu'er tea from compressed forms (cakes, bricks, tuos, etc.).
2. Adding Tea: Place the prised-off Pu'er tea into the gaiwan.
3. Washing Tea: Pour boiling water into the gaiwan to steep the tea. This is known as the first infusion, which is generally not consumed but used to wash away any dust and to help the tea gradually awaken in the water.
4. Discarding the First Infusion: The first infusion should be quickly discarded from the cup to avoid over-extraction of the tea flavor.
5. Repeat the First Infusion Action: The second infusion is to moisten the tea and is also not consumed.
6. Third Infusion: Pour boiling water again to steep the tea. This infusion is the first one meant for drinking.
7. Decanting the Tea Liquor: Based on your preference for the strength of the tea, decant the tea liquor after a certain period of time for tasting (the longer the Steeping time, the stronger the tea liquor; for the first three infusions, about 10 seconds is usually sufficient). The tea liquor is decanted from the gaiwan into a pitcher, where a strainer can be placed on top of the pitcher to filter out any small tea fragments.
8. Serving and Tasting: Pour the tea liquor from the pitcher into individual small tea cups for everyone to share and enjoy the Pu'er tea.
In addition to the essential tools mentioned above, remember to prepare a tea tray, tweezers, an electric hot water pot, and other Gongfu tea wares in advance.
