Depending on the utensils used, I divide the brewing of Green Tea into glass brewing method, Gaiwan brewing method, and bowl brewing method. The glass brewing method is the most common and simplest way to Brew green Tea, suitable for everyday individual tea drinking or hosting guests at home or in the office.
The steps for the gaiwan brewing method are as follows:
Warm the gaiwan: Pour in about 1/3 hot water and rotate the gaiwan so that the hot water touches other parts of it, quickly raising its temperature.
Add tea: Add an appropriate amount of tea based on the size of the gaiwan.
Pre-infuse the tea: Pour in about 1/3 hot water, keeping the water temperature between 85°C-90°C to stimulate the aroma of the tea.
Pour in the rest of the water: Add the remaining hot water, being careful not to exceed a temperature of 80°C-90°C.
Swirl to release aroma: Gently shake the gaiwan to ensure the hot water fully immerses the tea leaves. At this point, you can sense the aroma released by the tea.
Taste the tea: Before tasting, take a moment to appreciate its aroma first.

Many tea enthusiasts often use methods for brewing fermented teas when making green tea, directly using boiling water. However, water temperature is a significant factor affecting the quality and taste of green tea. Since green teas are made from new leaves and tender buds, overly hot water can overcook the tea leaves, causing their components to change and lose their essence, thus impacting the nutritional value and taste of the tea soup. Therefore, the ideal water temperature for brewing green tea is generally around 80°C, which helps preserve the nutritional components of the tea leaves perfectly.
