Brief Introduction to Yellow Tea Knowledge

Yellow Tea is characterized by its "yellow leaves and yellow soup." This yellow color results from a wrapping and yellowing process during tea production. Yellow tea is divided into three categories: yellow bud tea, yellow small tea, and yellow large tea.

Yellow tea leaves are tender, with visible pekoe, and have a fresh, mellow aroma. Due to differences in varieties, there are significant distinctions in leaf selection and processing techniques. For example, "Junshan Silver Needle" tea from Junshan, Dongting Lake, Yueyang, Hunan Province, uses only plump buds. Its production process is meticulous, involving ten steps: fixation, spreading, initial baking, re-spreading, initial wrapping, re-baking, further spreading, re-wrapping, drying, and grading. The processed "Junshan Silver Needle" tea has a hairy appearance and a bright golden-yellow color.

Yellow tea features "yellow leaves and yellow soup" and is a lightly fermented tea. This yellow color mainly comes from the wrapping and yellowing process during production. Yellow tea can be classified into yellow large tea, yellow small tea, and yellow bud tea.

Yellow Large Tea: Famous varieties include Huoshan Yellow Large Tea from Anhui and Dayeqing from Guangdong.

Yellow Small Tea: Famous varieties include Weishan Maojian from Ningxiang, Hunan; Beigang Maojian from Yueyang, Hunan; Yuan'an Luyuan from Hubei; and Pingyang Yellow Soup from Zhejiang.

Yellow Bud Tea: Famous varieties include Junshan Silver Needle from Yueyang, Hunan; Mengding Yellow Bud from Mingshan, Sichuan; Huoshan Yellow Bud from Huoshan, Anhui; and Mogan Yellow Bud from Deqing, Zhejiang.
