
What is Jin Jun Mei Tea Like
Jin Jun Mei was first developed by Fujian Wuyi Mountain Zhengshan Tea Industry, with contributions from a team including Mr. Zhang and Mr. Sun from Beijing, and Jiang Yuanxun, Liang Junde, Jiang Junfa, Jiang Junsheng, and Hu Jiexing from Wuyi Mountain. The tea leaves are selected from high-quality fresh tea leaves in the Wuyi Mountain region. The raw material for Jin Jun Mei black tea is the bud tips from wild tea trees in Tongmu Guan, Wuyi Mountain, considered "Zhengshan" (authentic mountain). Only after being processed with the latest improved techniques can it be regarded as authentic Jin Jun Mei. Due to Tongmu Guan's weathered semi-rocky, semi-sandy soil, along with its excellent ecology and climate, the tea buds produced here possess outstanding quality.
Jin Jun Mei is a top-grade variety of Zheng Shan Xiao Zhong black tea, belonging to the black tea category. The production of Jin Jun Mei black tea only partially follows the traditional methods of Zheng Shan Xiao Zhong. During withering, the tea leaves turn from bright green to dark green, indicating maturity. Fermentation is the most critical step and should be adjusted according to the weather. If fermentation is insufficient, it can easily result in a bitter taste; if over-fermented, it will lose the distinctive honey-like aroma of Jun Mei.
Drying is also crucial, as the right timing and temperature are essential to develop the true honey-like fragrance of Jun Mei. The biggest difference between Jin Jun Mei and traditional Zheng Shan Xiao Zhong is that the latter is smoked over pine wood, while Jin Jun Mei undergoes minimal smoking during withering. The production of Jun Mei demands extremely high-quality tea leaves and craftsmanship, resulting in limited output and thus making it exceptionally precious.
