
Health tea products in food applications (1) Natural antioxidants Tea natural antioxidants added to food can prevent food fading, extend shelf life, improve the relative stability of vitamins and carotene, and enhance the nutritional value and health benefits of food. They are characterized by being non-toxic, safe, and highly effective antioxidants. This is a natural antioxidant easily accepted by the food industry and can be applied to animal fats, vegetable oils, fried foods, fish products, meat products, pastries, medicines, and health foods. (2) Natural food pigments With the development of modern medicine, some synthetic pigments have been found harmful to human health. Therefore, some toxic synthetic food pigments have been gradually phased out, shifting towards the development of non-toxic natural pigments. Currently, the main natural tea pigments extracted from tea include tea green pigment, tea yellow pigment, and tea brown pigment. These pigments are rich in physiological active substances such as catechins, flavonoids, and caffeine, possess the health benefits of tea, and feature bright colors, stable properties, and safety, making them incomparable to synthetic pigments and other natural pigments, with broad development and application prospects. (3) Functional tea foods Successfully developed tea foods in the food industry include tea candy, tea biscuits, tea pastries, and tea meals. Especially tea meals, which in China can be categorized into longevity and anti-aging tea meals, intelligence-enhancing and brain-boosting tea meals, skin health and beauty tea meals, and cancer-preventing and anti-cancer tea meals. (4) Functional tea beverages Tea not only has certain nutritional and health functions but can also combine with other foods to enhance their nutritional and health benefits. Therefore, tea health beverages such as tea cola, fruit-flavored tea, tea soda, concentrated liquid, fresh juice combined drinks, flavored nutritional drinks with milk and other beverages, and compound instant tea are being widely developed.
