Longjing tea should be brewed with 80℃ water

Drinking tea after meals cannot dissolve grease

Reporters learned from the "Tea Encyclopedia Knowledge Exhibition" of the 11th West Lake International Tea Festival held yesterday that even the simple act of drinking tea has significant details to consider.

Brewing tea generally uses natural water. Tap water is purified natural water with a strong odor, so it's best to let it sit for 24 hours before brewing tea.

High-quality premium green tea generally shouldn't be brewed with boiling water; 80℃~85℃ is appropriate (cooled boiling water). Bulk black tea and scented tea can be brewed with 90℃~95℃ boiling water. Oolong tea and Pu'er tea use coarser raw materials and larger quantities of leaves, requiring freshly boiled water for brewing.

Depending on the tenderness of the tea leaves and the looseness of the tea strips, either the "top pouring method" or "bottom pouring method" should be used. Top pouring means adding water first then tea leaves, suitable for particularly tender teas like Biluochun and Jingshan tea. Bottom pouring means adding tea leaves first then water, suitable for loose-leaf teas like Liuan Guapian and Taiping Houkui.

Additionally, tea should not be consumed during fever; tea shouldn't be consumed with seafood or calcium supplements as it may easily cause kidney stones; thermos cups shouldn't be used for brewing tea; and drinking tea after meals cannot dissolve grease.
