Introduction to Nanjing Yuhua Tea

Yuhua Tea is a specialty of Nanjing, named after the Yuhuatai area outside Zhonghua Gate. The tea is produced in the suburbs of Nanjing. It is one of China's top ten famous teas. The tea leaves are round and green in appearance, like pine needles, with white hairs, tightly rolled and straight. After brewing, the tea liquor is jade green and clear, with a delicate and elegant aroma. Sipping a cup refreshes the heart and lungs, leaves a fragrant aftertaste on the teeth and cheeks, offers a mellow flavor, and a sweet, lingering finish.

Yuhua Tea is characterized by its tightness, straightness, green color, and uniformity. Its shape resembles pine needles: the strips are tight, straight, and rounded, slightly pointed at both ends, with upright tips, subtly revealing fine hairs. The color is a dark green that shines with a silvery luster. It has a rich and elegant aroma, a fresh and mellow taste, a green and clear liquor, and an even, bright, tender leaf base. Brewed with boiling water, the buds stand upright, floating up and down like emeralds, with a refreshing fragrance wafting. It is highly favored nationwide. Yuhua Tea excels in color, aroma, taste, and shape. After brewing, the tea liquor is jade green and clear, the aroma is elegant, the taste is mellow with a sweet aftertaste. It has effects such as quenching thirst, refreshing the mind, aiding digestion, relieving asthma, and reducing irritability and greasiness.

Nanjing Yuhua Tea is a treasure among roasted green teas and one of China's 'Three Needles.' It is a high-quality, delicate needle-shaped spring tea produced in the scenic areas of Nanjing's Zhongshan Mausoleum and Yuhuatai. When the tea buds grow to one bud with three leaves, harvesting begins about ten days before Qingming (Tomb-Sweeping Day) and continues until Qingming. Only one-bud-one-leaf tips are selected, with a length of 2-3 cm. The process involves fixing, rolling, shaping, drying, and hand-stir-frying with Chinese tallow tree oil, with only 250 grams of tea per batch. Yuhua Tea has strict requirements for raw material selection and processing. Before Grain Rain, tender leaves of one bud and one leaf, 2.5 to 3 cm long, are picked. They undergo four manual steps: fixing, rolling, shaping, and roasting/stir-frying—the entire process is completed by hand.
