 1. Utensil Selection

It is recommended to choose a white porcelain Gongfu tea set. This way, while brewing, you can enjoy the refreshing and elegant tea aroma of Tieguanyin, and also appreciate the beautiful posture of the Tieguanyin leaves stretching in the water and the晶莹剔透 (crystal clear) tea soup.


2. Water Temperature Control

Mastering the water temperature for brewing Tieguanyin is very important. The suitable water temperature is conducive to the release of Tieguanyin's aroma, taste, and its rich内含物 (contained substances).

Tieguanyin from high-altitude tea regions with superior quality should be brewed with near 100°C boiling water to release its内含物质 (contained substances). For ordinary Tieguanyin, the water temperature can be appropriately lowered to around 95°C.


3. Amount of Tea

How much tea leaves should be used to brew Tieguanyin? Adjust according to personal taste preference for strength. It is suggested to put 7~8 grams of dry Tieguanyin tea leaves, which can be brewed consecutively over 7 times. As a明星产品 (star product) of the Tieguanyin family, Shanguo Xiang from Shanguo Yinyi,每泡净重 (net weight per brew) is 8.35g, making it a top choice for Tieguanyin enthusiasts.


4. Brewing Method

Before brewing, you can first warm the cup with hot water, then add 7~8g of dry Tieguanyin tea leaves. After performing a温润洗茶 (gentle rinsing of the tea), to protect the fine绒毛 (fuzz) on the tender tea leaves and avoid激烈翻滚 (violent tumbling) of the leaves in the cup, water should be poured细细地 (gently) along the wall of the white porcelain盖碗 (lidded bowl) or glass cup. This ensures the tea soup remains清澈亮丽 (clear and bright).


5. Brewing Time

After the gentle rinse, slowly pour boiling water for the second time. Let the Tieguanyin sit in the cup for about 10 seconds, and before pouring the tea into the cup (commonly known as "出汤" - pouring the tea), maintain about 25~30 seconds. In later brews, you can reheat the water to boiling before brewing again.



6. Water for Brewing:

It is advisable to use high-quality mineral water or mountain spring water for brewing, with soft water (low mineral content) being best. This更能激发 (better stimulates) the activity and fresh aroma of Tieguanyin.


Office Brewing Method


Prepare the dry Tieguanyin tea leaves and an appropriate amount of boiling water. You only need three steps:

1. Rinse the Tea:

To make Anxi Tieguanyin release its flavor in a short time, first rinse the tea leaves.所谓润茶叶 (The so-called rinsing of tea leaves) means putting the dry tea leaves into a container, then pouring in scalding boiling water, and quickly pouring it out.

2. Brew the Tea:

After rinsing the tea leaves, you can start brewing properly. Pour in the boiling water, cover the cup, and the first brew can be poured out for drinking in 10-20 seconds to prevent it from becoming stronger and changing flavor over time.

3. Time:

For the second brew, you can extend the steeping time. Generally speaking, using this method to brew Tieguanyin, after连续冲泡 (consecutive brewing) 6-8 times, new tea leaves should be used.
