Jin Jun Mei is a premium variety of authentic Lapsang Souchong black tea, belonging to the black tea category. The production of Jin Jun Mei black tea only partially follows traditional Lapsang Souchong methods. During withering, the tea leaves are considered mature when they turn from bright green to dark green. Fermentation is the most crucial step and should be adjusted according to the weather. If fermentation is insufficient, it can easily result in a bitter taste; if fermentation time is too long, it will resemble ordinary Lapsang Souchong and fail to develop the unique honey-like aroma characteristic of Jun Mei.
