What Exactly Is Tea?

      Some say tea is a beverage, some say tea is a mood, and some say tea is a way of life. Royalty and nobles love tea, and so do scholars and writers. Whether in the context of music, chess, calligraphy, painting, or the daily necessities of firewood, rice, oil, and salt, tea is indispensable. So what exactly is tea?

There are many varieties of Chinese tea, including white tea, green tea, oolong tea, yellow tea, black tea, and dark tea. Each type has many sub-varieties, making it a diverse and colorful world.

Different teas are like different groups of people or stages of life.

White tea is like a child or teenager. Its aroma is light, and its infusion is clear. Drinking white tea feels like seeing an innocent, pure child. It is genuine, without too much burden; it quenches thirst, brings joy, and offers clarity and anticipation.

Green tea is like a sixteen-year-old girl. It has a light sweetness, a hint of astringency, and a tea fragrance, but it is not very耐泡 (infusion-tolerant). The youthful stage lacks depth and thickness but adds lightness and freshness, inviting one to try.

Tieguanyin, the light-fragrance type, is like a gentle, elegant lady. It smells fragrant, tastes sweet and smooth, and feels soft and delicate. It leaves a subtle lingering aftertaste, refreshing the mind. The rich-fragrance and mellow-fragrance types are like mature women, refined by time, exuding a rich aroma that penetrates the soul.

Dahongpao, also a type of oolong tea, is bold, grand, and powerful, like the masculinity of a man. The spiritual mountains and waters of Wuyi nurture its醇厚 (mellow) and unique "rock charm," giving it a lasting aftertaste, like a man's tender heart beneath a tough exterior.

Black tea, what is black tea? Black tea is like middle-aged men and women, less individualistic but more包容 (tolerant). It is steady, soft, and round, embodying the doctrine of the mean. Black tea has an approachable quality and good compatibility, making it suitable for blending.

Pu'er, classified as dark tea, is like a wise old person. It seems like tea but not quite tea, yet without tea there is tea. Like a wise elder, it may not stand out at first glance, but when you enter its inner world, its wisdom and rejuvenating spirit bring the enlightenment of "a single conversation is worth more than ten years of reading."

Good tea resembles people; careful tasting reveals true flavor. Good tea is not only like people; it can reflect all aspects of life. A cup of tea, from planting, growing, picking, to processing, naming, then observing its shape, hearing its sound, smelling its fragrance, tasting its charm, and then tea competitions, tea contests, poetry, and songs, leads to perception and升华 (transcendence). It has long surpassed its physical form and become the crystallization of ancestral wisdom and cultural heritage. 

Tea is elegant, graceful, smooth, diverse, yet so plain and unadorned.
