Longjing Tea Brewing Method (Longjing Series 3)

For water temperature, use approximately 75°C to 85°C water. Never use 100°C boiling water because Longjing tea is an unfermented tea, making the tea leaves very tender. If too hot water is used for brewing, it will scald the leaves and also extract bitter flavors, affecting the taste. So how to control the water temperature? We certainly won't use a thermometer, so the best method is to first pour boiling water into a "fairness cup", then pour it into the teapot for brewing. This easily controls the temperature. Another point to remember is to pour from high and pour out low. Because "pouring from high" increases the water column's contact with air, making cooling more efficient. After brewing and pouring out the tea soup, if not planning to brew immediately, open the teapot lid, do not cover it. As for the amount of tea leaves, just enough to cover the bottom of the teapot is sufficient. The brewing time should increase with the number of infusions. Chinese tea culture - There's no fixed method for brewing Longjing, but when enjoying Longjing tea, you can not only savor the beauty of the tea soup but also further appreciate the beauty of the Longjing tea leaves' rising and sinking changes during the brewing process; here I introduce three Longjing brewing methods to tea friends, or what could be called "Longjing Brewing Fun". These methods were learned from the "Chinese tea art" VCD produced by the "Hong Kong Museum of Art - Tea Ware Museum", named "Three Brews of Longjing", hoping to bring some small fun to tea friends when brewing Longjing.

First Brew of Longjing: Top Pouring Method

Longjing tea leaves are flat, tender, neatly striped, consistent in width, green-yellow, smooth to the touch, with one bud and one or two leaves.

1. Prepare a transparent glass cup (this example cup size is about 200ml), add an appropriate amount of suitable temperature water, then add about 5 grams of Longjing tea leaves.

2. Wait for the Longjing tea leaves to sink one by one, admiring them slowly revealing their graceful posture.

3. The tea leaves gradually stretch in the cup, one flag and one spear, rising and sinking, with clear soup and green color, clearly visible.

4. Looking more carefully, this can truly be said to be an artistic enjoyment!

5. Although it's ready to drink, it's hard to part, so take another look at her.

Second Brew of Longjing: Middle Pouring Method

1. Prepare a transparent glass cup (this example cup size is about 200ml), first add about one-third of suitable temperature water, add about 5 grams of Longjing tea leaves, and wait for the leaves to slowly unfold.

2. After the leaves have unfolded, fill with hot water.

3. It's ready to drink! But still hard to part, allowing you to look at her a few more times.

Third Brew of Longjing: Bottom Pouring Method

1. Prepare a lidded porcelain cup (this example size is about 150ml), warm the cup, add an appropriate amount of Longjing tea leaves.

2. Add a little suitable temperature water.

3. Pick up the brewing cup, shake it gently to completely moisten the tea leaves, and let the leaves naturally unfold.
